Ingredients for 12 murffins

2 cups (14oz/400g) sour kirsch (a jar)

2 tbsp baking powder

1/2 cup (3.5oz/90g) Genauva dark chocolate gems

1 1/4 cup (5oz/150g) whole weat flour

1/2 cup + 2 tbsp (4.5oz/125g) soft butter

1/2 cup (4oz/110g) sugar

1tsp cinnamon

3 large eggs

2 tbsp kirsch liquor

1/2 cup (4fl oz/120ml) whipped cream

1/2 cup (4oz/120g) mascarpone

  • Pour the sour cherries in a strainer and let them leak
  • Pre-heat the oven at 350°F (180°C)
  • Put paper muffin liners into the muffin tin
  • Mix baking powder, chocolate and flour
  • Mix butter, sugar en cinnamon until white and fluffy
  • Add the eggs one by one while beating
  • Add the flour mixture to the butter and mix shortly until combined
  • Spoon the cherries and the kirsch liquor to the batter
  • Spoon the batter into the muffin cups
  • Bake in the middle of the oven for 25 min
  • Take out of the oven and let them cool
  • Whip the whipped cream until stiff peaks appear
  • Spoon the mascarpone into the whipped cream
  • Pipe the cream on the cold muffin
  • Decorate with a cherry and chocolate shavings
