2 scallions

1/2 cup (4.5 fl oz/120ml) red port wine

1/2 cup (4.5 fl oz/120ml) red wine

1 branch thyme

1 laurel

2 crushed juniper berry

1 1/2 cup (13.5fl oz/350ml) brown game stock

2 tbsp cranberry jelly

1/3 cup (2oz/60g) unsalted butter

1/3 cup (2oz (60g) Genauva dark chocolate gems

Black grinded pepper

chocolate sauce


  • Use the same pan as you used to bake the meat, remove the meat and keep warm
  • Sear the scallions with butter
  • Add wine and port wine, fresh thyme, laurel and crushed juniper berries
  • Boil down to half
  • Add game stock and cranberry jelly, boil down to half
  • Sift the sauce and thicken if necessary
  • Set aside and add the Genauva chocolate gems
