½ pound fresh ginger root

½ cup (4oz/100g) sugar

1 1/4 cup (8oz/200g) Genauva extra dark chocolate gems (70%)

Cook the ginger

  • Peel the ginger and cut it super thin slices using a mandolin slicer
  • Place the ginger in a saucepan and cover with water to submerge
  • Bring to the boil
  • Turn the heat down to medium
  • Cover the sauce pan and simmer until tender (30-35 minutes)
  • Strain over a container reserve ¼ cup cooking liquid and drain


Make a syrup

  • Pour the reserved liquid into a pot and add the ginger and the sugar
  • Bring to the boil over a high flame
  • Turn the heat down to medium
  • Continue simmering the ginger and stir frequently
  • The liquid will vaporize after 10 minutes and the sugar starts to crystallize
  • Transfer the ginger to a parchment lined baking pan

The chocolate

  • Melt and temper the chocolate
  • Dip the ginger slices into the chocolate with a fork
  • Transfer to a parchment lined baking pan
  • Harden in the fridge
