Ingredients per serving


3 1/2 cup (16oz/450g) self rising flour

1 tbsp  unsweetened cocoa powder

1 tbsp almond powder

3/4 cup (5.3oz/150g) soft butter

3 eggs

2 cups (16fl oz/480ml) milk

3 cups (12oz/300g) confectioners’ sugar

1 lemon

green and red food color

8 Genauva extra dark chocolate chips

  • Sift the flour with the cocoa powder and mix it with the almond powder
  • Add the soft butter, milk and eggs
  • Mix until you have a smooth batter
  • Scoop the batter into a springform (11in/28cm diameter)
  • Preheat the oven at 347°F (175°C)
  • Bake 55 minutes
  • Let the cake cool down completely
  • Divide in 8 triangles
  • Make a frosting with the confectionary sugar and 3 tbsp of lemon juice
  • Mix well until the sugar is dissolved
  • Spoon 4 tbsp of icing in a piping bag
  • Divide the rest of the icing in 2 cups, 1 with green food color and the other with red food color and color the Santa Claus cakes or the Christmas trees
  • Pipe the face of Santa Claus or the decoration on the Christmas trees
  • Glue the Genauva  chocolate chips under Santa with some icing to make his feet
