Coffee pudding

4 cups (32fl oz/900ml) milk

1/2 cup (4oz/100g) sugar

1/2 cup (2oz/60g) corn starch

1/2 cup (3.5fl oz/100ml) cold milk

3 tbsp instant coffee


Chocolate sauce

1/2 cup (4oz/100g)  Genauva dark chocolate gems

2 cups (16fl oz/500ml)milk

1 egg yolk

1 tbsp corn starch

1/4 cup (2oz/50g)sugar

Serving tips

Turn over the cold pudding cups on a teller

Spoon the chocolate sauce around

Decorate with mint or whipped cream

Coffee pudding

  • Bring the milk to the boil
  • Combine sugar and corn starch with the cold milk, mix well until well dissolved
  • Add the instant coffee to the boiling milk
  • Add the starch slowly to the hot milk and stir well
  • Let it boil gently during 2 minutes while stirring
  • Rinse the cups with cold water, do not wipe off
  • Transfer the pudding to the cups and let it cool


Chocolate sauce

  • Keep some milk apart to dissolve the cornstarch
  • Melt the chocolate in the milk
  • Add the sugar, let it boil
  • Beat the egg yolk with a little warm sauce and mix
  • Pour to the chocolate mixture
