Ingredients per serving

1 1/4 cup (8oz/200g) Genauva ® unsweetened chocolate gems (cocoa mass)

1/2 cup (3oz/80g) sugar (I used honey)

1 tsp (0.2oz/6g) cocoa powder(sifted)

1/2 tsp (0.1oz/3g) soy lecithin (I used cocoa butter)

1/2 tsp (0.1oz/3g) natural vanilla flavor

Chopped almonds and hazel nuts


The block on the picture weights 2oz (50g) in chocolate, there are 3 blocks in 1 mold. The amount of chocolate you need depends on the mold you use.

I’ll give you the measures for 12oz (300g) chocolate.

This is the best recipe to have great results.

If you have health issues, you can easily adapt the recipe to your diet.

  • Prepare a mold
  • Take 1/4 cup 1oz (30g) unsweetened gems and set aside
  • Melt the rest of the gems in the microwave on low temperature and stir every 20 seconds, Cocoa mass can burn easily (you can also melt in a double sauce pan)
  • Add all ingredients and stir
  • Add the chocolate gems you have set aside and stir
  • Stir until you have 86°F (30°C)
  • Spoon into the mold
  • Tap the mold to the counter to release the air bubbles
  • Remove the chocolate from the sides with your pallet knife
  • Add the chopped nuts (or whatever you want as decoration and flavor)
  • Transfer to the fridge for at least 1 hour
  • Gently release the chocolate blocks from the mold by tapping the mold on the counter.
