Ingredients for 4 servings

1/2 cup (4oz/100g)  Genauva dark chocolate gems 

1tbsp butter

3 egg yolks

4 egg whites

pinch of salt

3 tsp icing sugar

4 speculoos biscuits

2 tsp gingerbread spices


4 twigs red currant

Easy chocolate mousse recipe


  • Melt the chocolate with the butter in a double sauce pan
  • Mix the egg yolks firmly with the chocolate
  • Sift the icing sugar with the chocolate
  • Add the gingerbread spices
  • Crumble the speculoos biscuits and add to the chocolate
  • Beat the egg whites with the salt until very stiff
  • Mix 3 tablespoons of egg white, the mixture will become smoother
  • Spoon the rest of the egg white to the mixture very gently (not with a whisk)
  • Transfer to individual cups
  • Put into the fridge for a few hours
  • Decorate with finely chopped chocolate and red currant
