Ingredients

5 eggs

1 cup (7oz/190g) butter at room temperature

½ cup (3oz/75g) Genauva extra dark chocolate (70% cocoa)

1 cup (8.5oz/225g) sugar

pinch of salt

1 ⅔ cup (8.5oz/225g) self-rising flour

strawberry or orange jam

paper or wooden lollipop sticks

 

Decoration

At your choice: Genauva milk or dark chocolate, fondant sugar, sugar pearls, popped rice, etc.

Preparation

  • Pre-heat the oven at 347°F (175°C)
  • Divide the eggs and beat the egg white until stiff
  • Melt the butter and chocolate in a double sauce pan (“au bain marie”)
  • Beat the egg yolks with sugar and salt until fluffy
  • Add the flour and mix
  • Add the melted chocolate
  • Fold in the egg white
  • Spoon into the cake mold (2 hemisphere silicon molds)
  • Bake for 15-20 minutes
  • Let cool in the molds for 10 minutes
  • Remove the molds and transfer to a wire rack to cool completely
  • Cut the top to have a flat surface and glue together with jam
  • Pierce the lollipop stick into the cake
  • Dip the cake in melted chocolate and decorate as you wish
