Ingredients for 4 servings:

4 Guinea fowl legs

4 Scallions

2 cups (8.5oz/220g) Stoned Northern cherries

1 ½ cup (0.7fl oz/300ml) Kriek beer (Belgium is famous for its chocolate but also for its beer)

⅔ cup (5.5fl oz/150ml) Poultry stock

3 tbsp olive oil

½ cup (4oz/100g) Genauva extra dark chocolate gems

2 tbsp fresh chopped chive

pepper, salt


  • Serve with potato croquettes, stewed broccoli
  • Drink a good, cooled Kriek beer

Guinea fowl with cherries and Kriek beer

  • Soak the cherries in the Kriek beer for 2 hours
  • Peel and chop the scallions
  • Use a cooking pot, warm the oil and sear the Guinea fowl
  • Add the scallions and cook them shortly.
  • Remove everything from the pot and keep warm
  • Pour the soaked cherries, beer and stock in the pot and mix with the remaining gravy.
  • Cook to the boil
  • Thicken if necessary
  • Remove from the stove, Add the chocolate and stir
  • Use individual plates, dress with the guinea fowl leg, cherries and sauce
  • Garnish with the chopped chive
