Ingredients

½ cup (2oz/50g) candied orange (or other candied fruit)

1 cup (5.5oz/150g) marzipan 50/50

1 cup (5.5oz/150g) brown sugar

1 pinch of salt

4 egg whites

½ cup (3oz/80g) ground almonds

½ cup (3oz/80g) ground hazelnuts

⅔ cup (4oz/100g) sifted flour

2 tsp Lebkuchen spices (1.2oz-35g cinnamon powder, 0.4oz-9g clove powder, 0.1oz-2g ground chili, 0.1oz-2g cardamom powder, 0.1oz-2g coriander powder, 0.1oz-2g ginger powder, 0.6dr-1g ground nutmeg, 0.6dr-1g ground mace.)

1 pinch baking powder

1 ¼ cup (8oz/200g) Genauva dark chocolate gems

Preparation

  • Mix marzipan, sugar, salt and egg whites until smooth and creamy
  • Add the chopped candied orange, add almonds, hazel nuts, flour, baking powder and spices
  • Make a big ball and wrap with plastic foil
  • Set aside at room temperature until the next day
  • Roll out the ball until a 0.6in (1.5cm) thick slab
  • Line 2 sheet pans with baking paper
  • Cut out the slab with a biscuit cutter (they come in a lot of nice Christmas shapes)
  • Lay on the lined pan and leave at least 0.8in (2cm) in between
  • Bake on 350°F (180°C) for 15-20 minutes
  • Cool down on a wire rack

Melt and temper Genauva dark chocolate gems*

Dip the cookies in the chocolate and let dry

Servings: 30 cookies (depending on the size of the cookie cutter)
