- Cook the water with the sugar, glucose and cocoa powder;
- Let it simmer for 5 minutes on a low fire until all sugar crystals are dissolved;
- Cool down until about 160°F (70°C) and melt the chocolate gems.
1 cup (7fl oz/200ml) water

½ cup (2oz/50g) cocoa powder
2 tbsp (0.7oz/20g) glucose
¼ cup (0.7oz/20g) Genauva dark chocolate gems
If you want other colors than brown use white chocolate, skip the cocoa powder and add food color.
