Ingredients per serving

2 cups (17.5oz/500g) water

3 eggs

4tbsp (1.5oz/40g) yeast

½ cup (4oz/100g) sugar

1cup (4.5oz/125g) cocoa powder

4 cups (17.5oz/500g) white flour

4 cups (17.5oz/500g) wholegrain

2 ½ tsp (0.5oz/15g) salt

½ cup (4oz/100g) butter 3 cups

(17.5oz/500g) Genauva dark chocolate gems

Preparation

  • Pour in the standing mixer: water, eggs, yeast, sugar, cocoa powder, white flour, wholegrain flour and salt
  • Knead for 3 min on speed 1
  • Add the butter
  • Knead for 6 min on speed 2
  • Leave to rise for ½ hour
  • Add the chocolate gems and knead well.
  • Divide in portions of 14oz (400g)
  • Roll up the dough and lay into a 9×4.9in (23×12,5cm) pan lined with baking paper
  • Rise 1hour
  • Beat the egg and brush on top
  • Carve a few times with a knife on top of the dough
  • Bake in a pre-heated oven at 375°F-400°F (190-200°C) for about 25min
