1 cup (5.5oz/160g) Genauva extra dark chocolate gems

3/4 cup (5.5oz/160g) butter

3 eggs

Pinch of salt

3/4 cup (4oz/100g) icing sugar

1/2 cup (100g) cane sugar

1 sachet vanilla sugar

3/4 cup (4oz/100g) flour

  • Heat the oven at 350°F (180°C)
  • Use a double sauce pan (“au bain marie”) and melt the chocolate with the butter
  • Beat the eggs with a pinch of salt
  • Add the 3 types of sugar and mix until you have a thick white mixture
  • Add the sugar mixture to the melted chocolate and mix well
  • Add the flour to the mixture and stir until well combined
  • Use a square and paper lined baking tin
  • Pour the mixture into the baking tin
  • Bake 30-35 minutes until you see a thin shiny crust
  • The brownie needs to be soft and moist on the inside.
