Ingredients

2 1/2 Cup (12oz/300g) flour

2 tbsp cocoa powder

1 pinch of salt

1/2 cup (3.5oz/100g) sugar

1 packet vanilla sugar

A dash of Jamaica pepper

1 pinch of nutmeg

1 egg

1 Cup (8oz/200g) cold butter

1/2 Cup (4oz/100g) orange marmalade

1 1/4 Cup (8oz/200g) Genauva dark chocolate

3/4 Cup (4oz/100g) crispy nuts

Preparation

  • Mix Flour, cocoa powder and salt
  • Make a pit in the center of the mixture
  • In the pit poor in the sugar, vanilla sugar, Jamaican pepper, nutmeg and egg
  • Cut the cold butter in little pieces and add to the mixture
  • Mix everything together with the stand mixer with the flat beater until a dough is formed
  • Turn the dough out onto a clean work surface and knead
  • Roll in the dough in a plastic foil and put in de fridge for 30min
  • Put the dough onto a well-floured work surface
  • Roll out , about 0.1in (2mm) thick and cut into rings of about 2.2in (5,5cm) diameter
  • Line a half-sheet pan with parchment paper and bake at 374°F (175°C) for 10minutes
  • Cool on a wire rack
  • Heat the orange marmalade and spoon a rounded 1/2 teaspoon of marmalade onto one of each pair of cookies, and sandwich their flat sides together.
  • Temper Genauva dark chocolate and poor over the cookies
  • Sprinkle the crunchy nuts on top while the chocolate is wet
  • Let the cookies dry
