Ingredients per 8 serving

12oz (300g) Genauva dark chocolate gems

1 cup (260g) cream (0,75 cup or 200g for whipping)

2 egg yolks

2oz (50g) clear cane syrup

Chocolate parfait


– Melt the chocolate gems with a bit of cream (0,25 cup or 60g) in a double sauce pan (“au bain marie”), don’t overheat the chocolate

– Beat the egg yolks with the stand mixer and add the cane syrup

– Whisk the remaining cream until you reach a yoghurt texture

– Mix the melted chocolate with the syrup/egg mixture

– Add the soft whipped cream and mix with a spatula until you get a smooth chocolate parfait

– Pour the parfait in high glasses

– Transfer to the freezer for minimum 2 hours


– Use your fantasy for decorating before serving
