Ingredients

1 1/4 Cup (8oz/200g) Genauva dark chocolate gems

2 tbsp butter

6 egg yolks

8 egg whites

A pinch of salt

6 tsp confectioners’ sugar (icing sugar)

Orange zest ½ orange

Whipped cream (for decoration)

Mint leaf

Maraschino kirsch

Crushed Roasted almond slices

Chocolate orange mousse

Preparation

  • Choose a beautiful high glass
  • Decorate the rim of the glass, turn upside down in egg white and then in crushed roasted almonds
  • The riming lasts longer if the glass is placed in the refrigerator for a few minutes before filling
  • Melt the Genauva dark chocolate gems with the butter in a double sauce pan
  • Whisk the egg yolks with the chocolate firmly
  • The water may nog boil and be careful that no water enters the pan
  • Beat the egg whites with a pinch of salt until peaks form
  • Sift the confectioners’ sugar on top of the melted chocolate and mix
  • Add the orange zest to the chocolate
  • Mix 3 tbsp of beaten egg white with the chocolate mixture to make it smoother
  • Spoon the stiff egg white into the chocolate mixture until everything is blended (not whit a whisk)
  • Spoon the chocolate mousse into glasses and cool down in the fridge
  • Decorate with whipped cream, orange, maraschino kirsch and mint leaf
