1 Cup (5.3/150g) Genauva milk chocolate

1/2 Cup (4oz/100g) butter

12 paper baking molds

2 Cups (9oz/250g) flour

2 tsp baking powder

1/2 tsp baking soda

3/4 Cup (5.3oz/150g) sugar

1 packet vanilla sugar

1 pinch of salt

2 eggs

1/2 Cup (3.5fl oz/1dl) strong coffee

4 tbsp rum

1 Cup (7fl oz/2dl) whipped cream

1/4 Cup (1.8fl oz/50ml) caramel sauce

  • Melt the chocolate (microwave or double sauce pan)
  • Heat the oven until 350°F (180°C)
  • Put the paper molds into a muffin baking tin
  • Mix the flour, baking powder, baking soda, melted chocolate, sugar, vanilla sugar and salt
  • Beat the eggs and add the coffee and rum
  • Add the flour mixture to the eggs and mix well
  • Spoon the dough into the paper molds and bake in the middle of the oven for 20-25 min
  • Take the muffins out of the oven and let them rest in the baking tin for 5 min
  • Put them on a wire rack and let them cool down
  • Whip the cream until soft peaks form and fold gently the caramel sauce into it
  • Decorate the muffins with the whipped cream and some grated chocolate
